Method:
Put the broth in a deep frying pan and add the grated cheese. Bring this to a
boil, and break in the eggs. Season to taste and continue cooking until done.
Serve with lemon.
11. EGGS WITH HARD CHEESE.
Another Style.
PEYNIRLI YOUMOURTA.
Ingredients:
Butter ..............................1 tablespoonful.
Hard Cheese ................2 tablespoonfuls, grated.
Eggs .........................................3 to 4.
Salt and pepper, to taste.
Method:
Melt the butter in a deep frying pan and add the grated hard cheese; over this
break the eggs. Season to taste and continue cooking until done.
Serve with lemon, if desired.
12. SCRAMBLED EGGS WITH ONION.
JILBERLI YOUMOURTA.
Ingredients:
Butter .............................2 tablespoonfuls.
Dry Onion .................................1, medium.
Plain Water ..............................1/2 cupful.
Eggs ..............................................4.
Salt and pepper, to taste.
