22. MEAT GRILLED WITH EGG-PLANT ON SKEWERS.
PATLIDJAN SHISH-KEBAB.
Ingredients:
The Broil.
Meat ...................... 1/2 pound fillet of mutton or lamb.
Eggplant ........................................... 1, medium.
The Sauce:
Butter ............................................ 1/2 tablespoonful.
Onions .................................................... 2, medium.
Green Pepper .............................................. 1, medium.
Tomatoes ...... 2, ripe (or 3 to 4 tablespoonfuls of canned tomatoes).
Salt and pepper, to taste.
Method:
Cut the meat into walnut-sized pieces, also the eggplant, into one-inch square
or a little larger pieces. Then arrange these, alternately, on wooden or iron
skewers and broil over a moderate fire.
This Kebab is served, as it is, with a vegetable salad, but many prefer it with
a sauce made in the following manner:
