22. "CHIP" FRITTERS.
YOUHKA BEOREGH.
Ingredients:
Flour .....................................2 cupfuls.
Hard Cheese ........................1 cupful, grated.
Eggs ..............................................2.
Parsley .....................................1 bunch.
Butter ..............In quantity required for frying.
Method:
Make a stiff paste of the flour and some lukewarm water, then roll it out into a
very thin sheet. Cut this into playing-card-sized pieces, and have ready to
stuff with the following mixture:
Mix well the grated hard cheese with the eggs, and then add the parsley, which
should be very finely chopped. Take small finger-sized pieces of this mixture
and roll in the paste pieces. When through with all, fry them in smoking hot
butter. Serve hot.
