Method:
Slice the onions into desirable thicknesses, salt heavily, crush by the hand,
wash well and then season to taste, and after adding the vinegar and the olive
oil, serve with a few black olives over them, if desired.
9. LETTUCE AND CUCUMBER SALAD.
MAROL--KHIYAR SALATA.
Ingredients:
Lettuce ..............................1 head, medium.
Cucumber ..................................1, medium.
Dry Onion. .........1, medium (or 3 to 4 green onions in season; optional).
Olive Oil ..........................2 tablespoonfuls.
Vinegar .......................3 to 4 tablespoonfuls.
Mustard ...........................1/2 tablespoonful.
Salt and pepper, to taste.
Method:
Take the crisp parts of the lettuce and arrange in a suitable plate; over this
slice fine the cucumber. Season to taste, and then after blending the mustard,
the vinegar, and the olive oil, pour over the whole as dressing.
