9. BOILED MEAT, SPICED.
BAHARLI SEOYUSH.
Ingredients:
Cold Boiled Meat....7 to 8 slices of medium size.
Butter ......................... 1 tablespoonful.
Flour .......................... 1 tablespoonful.
Dry Onions ........................... 2, medium.
Red Wine .............................. 1 cupful.
Broth ............................... 1/2 cupful.
Mushroom .............................. 1 cupful.
Thyme ........................... 1 to 2 pinches.
Salt and pepper, to taste.
Method:
Chop the onions and fry in the butter over slow fire, until nearly brown, then
add the flour. After 5 minutes add also the wine and the broth, the mushroom
chopped, and the thyme. Season the whole to taste, and after boiling for 10
minutes, put in the sliced meat and continue simmering until the ingredients
look well blended, and the sauce becomes quite thick.
