MISCELLANEOUS PREPARATIONS.
Bouquet.
A mixture of spices, to be used especially for sauces, is called a bouquet, and
is generally made as follows. One ounce parsley twigs, one fifth of an ounce
thyme, the same weight of bay leaves. Wash the parsley. Put the other two parts
in the middle and cover them with the parsley, which wrap all around. Then tie
it, and cut off the loose parsley twigs which otherwise may fall away. The
bouquet ought to be one inch in length. A simpler bouquet may be made of parsley
and chives.
