Remarks: The fresher all the greens are, the better, as they then are not only
better tasting, but also more wholesome. The way to test whether fresh or not,
is to bend or break them. If they show themselves brittle, easily breaking, then
they are good, but at least partly spoiled if they are flexible and tough.
Otherwise it is easy enough to judge by the appearance of a
