STARVING MUSICIAN'S COOKBOOK Clam Chowder - New England Home Style Recipe1/2 lb Bacon sliced 1 Onion, sliced 3 Small Potatoes, diced 3 Cup Water 1 Dash Black Pepper 24 Clams or 3 8oz Cans Minced Clams 2 Cups Half & Half 2 Cloves Garlic, crushed 3 Tbsp Butter 1 Teasp Salt 1/4 Teasp Black Pepper 1 Teasp Basil 1 Teasp Parsley 1 Teasp Thyme
Combine clams, their liquid and water; bring to a boil. Drain clams, reserving liquid. Remove clams from shells; chop meat; set aside.
Cook bacon. Saute onion with Bacon until clear. Drain oil and set aside. Combine potato, water, salt, pepper, basil, parsley, thyme, and liquid from clams and cookuntil potatoes are tender. Stir in clams, milk, butter, bacon and onion. Heat thoroughly. For New England Style Fish Chowder replace clams with 11/2 lb. haddock or cod.
