Fried chickens.
Split them lengthwise, soak half an hour in cold water, wipe perfectly dry, and
put in a dripping pan, bone side down, without any water. If the oven is hot and
the chickens young, they should be done in half an hour. Take out and season
with salt, pepper and some butter,
